Chicken Sausage Pesto Tortellini

Ingredients

½ package Holmes Chicken Sausage Slices (6 oz)
1 tbsp olive oil
9 oz cheese tortellini
½ cup basil pesto
¼ cup heavy cream
Juice of 1 lemon (about ⅛ cup)
Grated parmesan cheese garnish
Fresh basil to garnish

  1. Boil a large pot of water, making sure to salt your water! Cook the cheese tortellini to al dente according to the instructions on the package. Reserve ½ cup of the pasta water before draining the tortellini.
  2. In a skillet over medium heat, sear the chicken sausage slices until golden, then set aside.
  3. Add the pesto and heavy cream to the skillet, stirring to combine. Heat up the sauce and continue stirring until smooth.
  4. Stir in the reserved pasta water, a little at a time, until you’ve reached your desired consistency.
  5. Stir in the lemon juice, cooked tortellini, and seared sausage. Season to taste with salt and pepper.
  6. Serve hot with a sprinkle of parmesan and some fresh basil to garnish.
