Jalapeno Cheddar Sausage Cornbread Bites

Ingredients

½ package Holmes Jalapeno Cheddar Sausage Slices (6 oz)
½ cup yellow corn meal
½ cup all purpose flour
2 tbsp sugar
½ tbsp baking powder
½ tsp salt
½ cup buttermilk
1 egg
2 tbsp vegetable oil
1 jalapeno, finely diced
½ cup shredded cheddar cheese

  1. Preheat your oven to 425°F, then combine corn meal, flour, baking powder, and salt in one bowl.
  2. In a separate bowl, mix together milk, egg, oil, and sugar.
  3. Mix together the wet and dry mix, then fold in the diced jalapeno and shredded cheddar cheese.
  4. Divide batter into a greased mini muffin pan. Place one jalapeno cheddar sausage slice in the center of each cornbread muffin and press into the batter.
  5.  Bake for 15 minutes, or until muffins are cooked through and browned on top.
  6. These are best served warm with a drizzle of honey.
