Jalapeno Sausage Corn Dip

Ingredients

½ package Holmes Jalapeno Sausage Slices (6 oz), diced
3 jalapeños, diced
1 clove minced garlic
1 tbsp olive oil
8 oz cream cheese, softened
3, 15-oz cans corn, drained (you can use regular corn or opt for Fiesta style)
⅓ cup mayonnaise
2 cups shredded Mexican cheese blend

  1. Preheat the oven to 350ºF.
  2. In a cast iron (or other oven safe) skillet over medium-high heat, sear the sausage and jalapeños in olive oil until the sausage has browned and the jalapenos start to soften.
  3. Combine sausage and jalapeños with the cream cheese, corn, mayonnaise, and pepper jack cheese. Spread evenly in the cast iron.
  4. Bake until golden and bubbly (about 20 minutes), then serve hot with tortilla chips.
