Sausage & Feta Spaghetti Squash

Ingredients

½ package Holmes Original Sausage Slices (6 oz)
1 large spaghetti squash
8 oz feta cheese
1 cup cherry tomatoes, halved
3 cloves garlic, minced
4 tbsp olive oil
¼ cup fresh basil, chopped
Salt and pepper to taste

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the spaghetti squash in half lengthwise, then scoop out all of the seeds. Place the two halves cut side up on the baking sheet.
  3. Add half of the feta cheese to the center of each spaghetti squash half.
  4. Place half of the cherry tomatoes and garlic in each squash half, covering the feta cheese.
  5. Drizzle each half generously with olive oil and season with salt and pepper.
  6. Bake until the spaghetti squash is fork tender, this will take approximately 45 minutes.
  7. When 10 minutes remain, place the sausage slices in a single layer on the baking sheet and let it cook for the remainder of the time with the spaghetti squash.
  8. When finished baking, use a fork to pull the squash apart. Add half of the sausage to each half of the spaghetti squash and stir together. Sprinkle with fresh chopped basil if desired, and enjoy hot!
